One beast produces a full range of cuts — from T-bones and rib cutlets down to mince, sausages, and roasting cuts. Our boxes reflect that reality.
You will not get to choose only rib eyes. There are not enough on a beast to go around. What you get is a practical, honest mix of everything the animal produces — divided proportionally into a box that works for a household.
You receive a variety — steaks, roasts, mince, sausages, and everything in between. Each box is the same proportional split, just at different weights.
If you want control over specific cuts and quantities, a quarter, half, or whole beast gives you that. You choose your cuts from our cut sheet — we handle everything with the butcher from there.

Not a box. A beast. Choose your cuts from our cut sheet — we handle everything with the butcher from there. A deposit holds your spot on the next run.

We run our herd on our own land in the Northern Rivers. Every animal is raised here, known to us from birth, and processed one beast at a time. We sell direct because it gives us full control over how the beef is raised, handled, and delivered — and it means you know exactly where your beef comes from.

The Process
How ordering works
Four steps from our farm to your door. Nothing hidden, nothing complicated.

Choose Your Box
Pick a Jillaroo, Jackaroo, or enquire about bulk. Frozen is available now. For fresh, reserve a spot in the next processing run.
02.
Locally Processed
Your order goes into our next run. It’s processed at our local abattoir in Casino, then hung by our butcher before cutting.
03.
Cut, Packed, Cryovaced
Your beef is cut to order, portioned, vacuum-sealed and packed. Ready for delivery.
04.
Delivered Chilled
Local orders Fiona delivers directly. Non-local orders go via refrigerated courier. Fresh runs deliver approximately two weeks after the order cut-off — you choose your delivery day.

Every box is built from a single identified animal, tracked individually through processing. You know where your beef came from. So do we.
MSA Graded for eating quality
Every beast is independently graded by Meat Standards Australia before processing. MSA grading predicts eating quality across every cut — it is the most rigorous eating quality program in Australia.
